Easy 30 Minute BBQ Chicken Pizza (No Yeast Required!)

This 30 Minute BBQ Chicken Pizza is so easy to make and insanely delicious. The dough requires no yeast and is topped with fresh spinach, mozzarella, BBQ chicken, red onions, turkey bacon, and cilantro. Oh, and don't forget the garlic crust!

For years, I tried to stay away from pizza because modern diet culture called it "junk food" or "unhealthy." But just like almost everything in the food science world, there's a spectrum of nutrition each food fits into and it's not as black and white as "unhealthy" vs "healthy."

Granted, there are plenty of pizza options out there that aren't the best for you (like the ones that need extra napkins just for soaking up all the excess oil...ew), but not all pizza is created equal.

My husband has taught me this every day of our marriage! He LOVES pizza no matter who makes it but also knows that there's cheap pizza, fast pizza, gourmet pizza, and really really good pizza.

So I set out to create a pizza that was cheap, fast, gourmet, AND really really good. Not just good like "mmmm this is so tasty" but also good for you, like there's actually some "healthy" options in there!

And guess what - today's Easy 30 Minute BBQ Chicken Pizza really is the pizza of your dreams! All you need is some simple ingredients, 15 minutes of prep time, and an oven and you're set!

Ingredients for BBQ chicken pizza

  • For the dough: one of the reasons this homemade pizza recipe is so E-A-S-Y is because the pizza dough is basically two ingredients and none of those ingredients are yeast! Yay! All you'll need is homemade self-rising whole wheat flour (I teach you how to make it) and nonfat plain Greek yogurt. With 5 minutes of work, you've got the easiest homemade pizza dough that's actually healthy and packed with protein!
  • Cooked chicken: you can either prep grilled chicken beforehand or purchase shredded rotisserie chicken from the store. Either way, having the chicken ready to go is key for enjoying the best homemade pizza recipe on a busy weeknight!
  • Fresh spinach: not the most traditional ingredient for a BBQ chicken pizza, but don't worry, we put it on the very bottom of the pizza so you won't even know it's there. The first time I made this recipe for my husband, he had no idea!
  • Low fat mozzarella cheese: the classic "pizza cheese" that's creamy and just mild enough to pair with so many unique flavors. You can also use a low fat Mexican cheese blend.
  • Red onion: another classic ingredient for BBQ chicken pizza. They're quite strong, so I recommend dicing them pretty small and adding as much (or as little) as you like. For my husband and I, it's only 1/4 of the entire onion!
  • Turkey bacon: when I researched the ingredients for BBQ chicken pizzas from national chains like Dominos, Pizza Hut, and Papa Murphy's, half of them used bacon and all of them had BORING flavor combos. So I decided to use turkey bacon on my healthy BBQ chicken pizza recipe to boost the flavor and add some texture. If you're not a fan of bacon, feel free to omit (but you're missing out).
  • Really good BBQ sauce: my personal favorite (not sponsored) is Stubb's Spicy BBQ sauce because it doesn't have any high fructose corn syrup and the flavor is just incredible. If you're looking for a no-sugar-added BBQ sauce, I recommend G Hughes brand!
  • Herbs and seasonings: red chili flakes, garlic salt (for the best crust ever!), and fresh chopped cilantro will do the trick.

How to make healthy BBQ chicken pizza

Start by making your homemade pizza dough. You'd never guess it could be done with [two] ingredients but it's a thing and once you try it, you'll never go back!

Make your whole wheat self-rising flour by whisking together the flour, baking powder, and salt until well combined. Now you'll never have to buy a bag of self rising flour from the store!

Make a well in the center of the bowl and add in the greek yogurt (picture 1).

Note: nonfat greek yogurt is actually better for this dough recipe than full fat greek yogurt because of the moisture content. Don't try using anything other than nonfat or you'll be disappointed (and messy). Also, greek yogurt is THE only yogurt that works - don't try using regular yogurt.

Now, just fold the yogurt into the flour until a crumbly dough forms (picture 3). Don't worry if there's leftover flour at the bottom, it'll come together once you start kneading!

Turn the dough onto a well floured surface and knead by hand, incorporating all the excess flour and crumbs, until the dough is firm. Add more flour as necessary if the dough still seems a bit wet and sticky - I usually add 2-4 tablespoons.

Once the dough is ready, sprinkle more flour on top and roll out into a 12" circle. Gently roll up the edges (pictured below) to form a "crust." Your pizza should now be about 11" in diameter.

Layer on the spinach, 3/4 of the cheese, BBQ chicken, red onions, the remaining cheese, and the red chili flakes. S

pray the crust with cooking spray and sprinkle on the garlic salt. Trust me when I say the garlic crust makes ALL the difference!

After baking, top with the crispy bacon, fresh cilantro, and drizzle on the remaining BBQ sauce. Et voila! You've got the easiest and tastiest healthy BBQ chicken pizza ever!

Can I use store-bought dough instead of homemade pizza dough?

Of course! Just know that the nutrition facts will be different than what I calculated.

Can I make this homemade pizza recipe gluten-free?

Yes! The 2-ingredient pizza dough recipe works with all-purpose flour, whole wheat flour, and gluten-free all-purpose flour. Just use the exact same amount of gluten-free flour as the recipe calls for.

Why is my dough sticking to the counter?

Either you didn't flour your surface and your hands or you didn't add enough flour to the dough. Even though the recipe calls for 1 cup, technically it needs about 3-4 tablespoons more flour by the end, which comes from the floured surface, hands, and intentionally adding more flour as you knead.

Why doesn't the recipe call for BBQ sauce on the bottom of the pizza?

Because the pizza is baked in a traditional oven at only 450°F, the temperature isn't hot enough to cook the dough with a wet sauce on top. Tossing the chicken in the BBQ sauce and drizzling more on top at the end allows for the dough to crisp up in the oven without over-baking the rest of the pizza.

Why is this considered a "healthy BBQ chicken pizza" recipe?

Not only did I use whole wheat flour, greek yogurt, and turkey bacon, but I also added spinach and a better brand of BBQ sauce! In fact, each slice of pizza is less than 200 calories with 21g of protein! So if you have two slices, that's 42g of protein!

Ingredients

For the Dough

  • 1 C whole wheat flour* (plus more for kneading)
  • 1 C nonfat plain greek yogurt
  • 1¼ tsp baking powder
  • ¼ tsp salt

For the Pizza

  • 1 lb. cooked chicken (cubed or shredded)
  • ⅓ C Stubb's BBQ Sauce, divided
  • 1 C spinach
  • 1 C low fat mozzarella cheese, divided
  • ¼ red onion, diced
  • ¼ tsp red chili flakes (optional)
  • 1 tsp garlic salt
  • 2 slices Jennie-O turkey bacon
  • ¼ C chopped cilantro

Instructions

For the Dough

  1. Preheat the oven to 450°F and line a pizza pan** with parchment paper.
  2. In a medium sized bowl, whisk together the flour, baking powder, and salt until well combined.
  3. Create a well in the center of the bowl and add in the greek yogurt.
  4. Gently fold the yogurt into the flour mixture until a crumbly dough forms. The dough will be "wet" and slightly sticky, and there will be some flour that doesn't completely incorporate in the bowl - that's ok! Once most of the dough has combined, knead together by hand on a well floured surface until it comes together completely. Add 1 tablespoon of additional flour to the dough at a time until the dough is no longer sticky or wet to the touch.
  5. Flour a rolling pin and sprinkle a touch more flour over the ball of dough. Roll dough into a 12" circle, then use your hands to roll up the edges of the pizza into a "crust" (see photo for reference). You should be left with a pizza approximately 11" in diameter. Transfer the pizza to the prepared parchment paper.

For the Pizza

  1. Toss the cooked chicken in 3 tablespoons of BBQ sauce.
  2. To build your pizza, first spread out the spinach in an even layer over the pizza dough. (Yes, you read that right, no sauce on the bottom!) Sprinkle ¾ C of the mozzarella cheese on top of the spinach, then all the chicken and red onions over the cheese. Add the remaining cheese and red chili flakes on top.
  3. Spray the rolled crust with cooking spray, then sprinkle the garlic salt over the crust. Don't feel obligated to use the entire teaspoon! Season according to taste.
  4. Your pizza is ready! Bake in the oven for 15-17 minutes or until the pizza reaches desired doneness. If you like a softer crust, remove at 15 minutes; if you like a more crispy crust, remove at 17 minutes.
  5. While the pizza is cooking, prepare the bacon according to package instructions. Dice into small pieces.
  6. When the pizza is done, drizzle the remaining BBQ sauce on top and garnish with cooked bacon and chopped cilantro. Slice into 8 pieces and DEVOUR!

Notes

*For gluten-free diets, you can use an equal amount of gluten-free all-purpose flour.

**If you have a pizza stone or a 12" cast iron skillet, you don't need parchment paper.
