Check out the reader favorite recipes from the first year of Ka Pai Cooking! This list has a little bit of everything to show off the Top 15 Best Healthy Recipes of 2020.

This year has been quite the year for food bloggers! I feel fortunate to have started this little business when I did.

It started as a little hobby on Instagram back in January, became an official blog in April, then became my full time job in August!

Whether you still consider yourself a novice in the kitchen or you've graduated to the big leagues, each of you have really embraced the recipes I've shared this year and I couldn't be more grateful.

Here at Ka Pai Cooking, it's my passion to share easy, healthy, and affordable recipes so you can enjoy your time in and out of the kitchen.

Furthermore, I'm a firm believer that eating healthy shouldn't just be a "new year's resolution," it should become a lifestyle choice.

Because it's New Year's Eve, I not only wanted to share my top 15 reader favorites from 2020 because it's a fun way to end the year, but I wanted to share the Top 15 Best Healthy Recipes of 2020 so you have a solid list to start the new year!

#1 Irresistible 30-Minute Egg Roll in a Bowl

I hoped this would be a popular recipe on the blog (it's certainly one of our favorites!) but I had no idea it would become the #1 Ka Pai Cooking recipe of 2020! If you haven't made this yet, it needs to be on your list for next week. It's incredibly easy, very flavorful, and incredibly healthy!

#2 Sweet Potato and Black Bean Enchiladas

When I saw this recipe made the top 3, I was ecstatic! It's definitely in my personal top 3 and you guys shared the love this year.

It's so hearty you won't even miss the meat! My husband isn't the biggest fan of sweet potatoes or vegetarian meals, but he absolutely loved these enchiladas. This recipe is perfect to kick off the new year!

#3 Better-Than-Takeout Healthy Orange Chicken

I originally developed this recipe for my younger brother when he came to visit back in May. He loves orange chicken, but I didn't love that every other recipe called for heavy breading and lots of oil for frying, so I wrote my own!

This chicken is seared on the stove in a touch of sesame oil, then simmered in a thick, sweet, orange sauce. My brother said he like my version better than Panda Express, so there you have it! You need to make it ASAP!

#4 The Best Healthy Chocolate Chip Banana Bread

There's a reason it's called THE BEST! This banana bread is sweet, moist, and guilt-free because it's made with greek yogurt instead of butter, honey instead of refined sugar, and egg whites for a boost of protein!

Every single person that's tried this recipe said "I can't believe this is so healthy!" Stock up on the ingredients because one loaf won't be enough!

#5 Vegan Sweet Potato Casserole

This is by far my favorite recipe of 2020. I had this one on my list for months and finally released it for Thanksgiving!

Gluten-free, refined-sugar-free, and vegan, this classic casserole is the star of any dinner table with it's sweet potato mash, maple-infused crunchy streusel, and incredible flavor thanks to some unique ingredients. No marshmallows here!

#6 Double Chocolate Peppermint Cookies

Believe it or not, "incredibly indulgent" and "healthy" can apply to the same recipe! These delicious Christmas-inspired cookies are only 128 calories a cookie and they're low-sugar, thanks to Stevia and Stevia-sweetened white chocolate!

They're also infused with peppermint extract, drizzled with peppermint white chocolate, and topped with crushed candy canes, so I guess you could say they really are the perfect cookie. Don't wait to try the recipe!

#7 Amazing Apple Pie German Pancakes

After an entire month of my blog being down (that's a whole story in and of itself!), I celebrated my brand new website with a week's worth of brand new recipes, and these German Pancakes were one of them.

I love them because they're not only healthy, but they're macro-friendly too, which means there's a perfect ratio of carbs, fats, and protein in each serving.

Better yet, they are made entirely in a cast iron skillet and ready in 30 minutes!

#8 Veggie-Packed Vegan Pesto Pasta

Made in partnership with Ancient Harvest Pasta, this incredible meal is gluten-free, vegan, and packed with nourishing ingredients like my Oil-Free Lemon Basil Pesto, cherry tomatoes, and homemade breadcrumbs.

If you're looking for a simple, healthy weeknight meal, this is a great one to make! All the ingredients are already in your pantry!

#9 Healthy 3 Ingredient Pumpkin Spice Pancakes

Fluffy, drizzled with almond butter and smothered in sugar-free maple syrup, these pancakes are my favorite pancakes to date! They're also packed with whole grains and vitamin A, so you can start your day off right, no matter the day of the week. Pumpkin is still in season, right?

#10 Healthy Gingerbread French Toast with a Sweet Molasses Syrup

I was pleasantly surprised to see my Gingerbread French Toast make the top 10, considering I only released it two weeks ago!

But then again, I'm not surprised, because just LOOK at those plates! I'm drooling all over again.

Would you believe me if I told you the entire breakfast was refined sugar-free and macro-friendly? Well, you should, because that's exactly what makes this breakfast so good. I bet you have all the ingredients now!

#11 Instant Pot Sweet Chili Lime Pulled Pork Tacos

Need I say more? Every word in that title screams "eat me!" Good for gluten-free and dairy-free diets, these tacos are perfect for busy weeknights and family dinners. Did I mention there's a Peach Mango Salsa on top?

#12 Healthy One-Pot Chili con Carne

This easy chili is one of my go-to's when I'm scrambling for dinner. It's made entirely of pantry staples and some fresh produce, all in one pot!

Better yet, it makes 8 hearty servings, so you either have leftovers for days or you can instantly feed a crowd! Don't forget to top with some sliced avocado and plain Greek yogurt.

#13 Healthy Jalapeno Popper Chicken Casserole

I can tell you right now this casserole is my husband's favorite recipe to date. It's the perfect amount of spicy, cheesy, and healthy all thanks to reduced-fat Mexican shredded cheesy, turkey bacon, and cauliflower rice! It tastes just like your favorite game day appetizer but in a hearty dinner form. Dig in!

I knew this recipe was a winner when my husband, who doesn't like soup, told me I needed to make this Baked Potato Soup again!

This soup is everything you know and love about a loaded baked potato without all the saturated fat and heavy carbs!

Last but certainly not least is my Fudgy Triple Chocolate Banana Bread. Imagine my Best Banana Bread and a rich, fudgy brownie had a baby... and that's what this bread tastes like!

If you're not convinced on how good this recipe is, just look at the puddles of chocolate nestled in each slice. Need I say more?
